This volume includes contributions presented at the Second International Sym posium on Nutrition and Cancer, held in Naples, Italy, in October 1998 at the National Tumor Institute "Fondazione Pascale." During the Conference, experts from different disciplines discussed pivotal and timely subjects on the interactions between human nutrition and the development of malignancies. Comparing the themes of this Meeting with those discussed at the First Sympo sium in 1992, the major scientific advancements certainly derive from the extensive use of molecular approaches to perform research in nutrition. Moreover, the fundamental observation of R. Doll and R. Peto (1981), which suggested that at least 35% of all cancers (with large differences among different tumors) might be prevented by dietary regimens, has been definitively confirmed by epidemiological studies. On the other hand, the relationships between diet and cancer are quite intricate and complex; it is difficult, and at the same time not methodologically correct, to reduce them to simple terms. Metabolic and hormonal factors, contaminants and biological agents, and deficiency of specific protective nutrients are all pieces of the same puzzle.

Recent advances have contributed to our understanding of how a plant-based diet confers many health advantages and how substances from plants may be effective in the prevention of specific cancers. The Ninth Annual Research Conference of the American Institute for Cancer Research has focused on the latest developments in several categories of nutrients of wide contemporary interests. The conference sessions included such topics as the effects of soy, green tea, selenium, wine, grapes, and spices in cancer prevention. This conference was held in Washington, D.C. on September 2nd and 3rd, 1999, and was entitled Nutrition and Cancer Prevention: New Insights Into the Roles of Phytochemicals. The discussion program included a session that was devoted to the current status of herbal products in relation to cancer prevention, in recognition of the increasing attention that complementary and alternative medicine has been receiving from the scientific community as well as the general public. A separate presentation addressed the issue of nutritional supplements and cancer prevention.

There is a unique nutritional commonality developing in research relating to coronary heart disease and cancer. The primary aim of this conference was to provide a forum for the leading researchers, clinicians, educators and administrators in these two fields to present a program on heart disease and cancer which included a) the major historical milestones, b) the present areas of greatest interest in research and therapy, c) the latest nutritional, molecular, and biotechnological advances, and d) a perspective on the most promising areas for future research and therapy. Scientists have long contended that research marches on the feet of methodology. Thus there are numerous examples of research fields opening secondary to methodological advances. Our knowledge of these "killer diseases" has expanded greatly in the past few years and the advance has been catalyzed by use of an array of molecular biological techniques. Thanks to these, medical thinking in these areas is changing from considerations of treatment to strategies for prevention.
