Offbeat Tsukiji Market Guide provides an intimate look into the world's largest wholesale fish and seafood market, located in the heart of Tokyo. Drawing from twelve years of experience in the Japanese fish business, author Ken Chan offers unique guided tours to foreign visitors, and his passion for sharing the secrets of this fascinating cultural treasure shines from every page. Discover a world that, much like kabuki theater, involves intricate, dramatized dances-between buyers and sellers; wholesalers, middlemen, and retailers; and businesspeople, tourists, and security guards. The book's offbeat tone is sardonic toward the politicians and the security regime, while conveying friendship and respect toward the more sincere players on this vast stage. Learn both entertaining and informative details about Tsukiji Market, such as: Its four-hundred-year history Various ways to get to there How to get off the market's beaten tourist path What to do when a security guard approaches English names of the many types of fish and seafood Which sushi restaurants are the best The controversial plan to relocate the market An invaluable resource for anyone planning to visit the Tsukiji fish market, Offbeat Tsukiji Market Guide also delivers an intriguing read for foodies as well as for anyone interested in food markets or Japanese culture.

Jake Tilson written by Jake Tilson and has been published by this book supported file pdf, txt, epub, kindle and other format this book has been release on 2019 with Photography of markets categories.

This exhibition introduces an exciting glimpse of new works by Jake Tilson from an ongoing project about Tsukiji - Tokyo's famous fish market. Part of the exhibition at White Conduit Projects is a large display of eleven photo books - a visual encyclopedia of the market. Tilson has travelled to Japan regularly over the past 10 years to produce an extraordinary photographic record of the market. Each book is themed, organised and sub-divided to provide a visual train of thought. Works include observational micro-architecture sculpture, collage and painting - all revealing the makeshift mercantile architecture of the market, built with a shitamachi sensibility, layered with dense typography. Tsukiji Market (1935~2018) was the largest wholesale fish and seafood market in the world before it moved to its new location in Toyoso just three months ago. It is an extraordinary vibrant place with its noise, carts and forklifts, temporal fit-outs, signs and bustling auctions. Tilson comments 'My work has often involved the retail landscape of shops and markets. After forty years I've noticed an unintended historical perspective, the work becomes in part a record of places and businesses that have closed. With Tsukiji its fate was unexpectedly sealed half way through working on the project.' These works display a typical Asian tendency when constructing temporary structures in markets - "beauty as chaos" as Kyoichi Tsuzuki says in his seminal book on Tokyo. Once the element of their mundane utility and the meaning of Japanese signs are deconstructed, the micro-architecture sculptures become pop objects. As they are small in size, they are instantly appealing and lead to an intimate affinity. -- from press release.

The Sushi Economy written by Sasha Issenberg and has been published by Penguin this book supported file pdf, txt, epub, kindle and other format this book has been release on 2007-05-03 with Business & Economics categories.

The highly acclaimed exploration of sushi’s surprising history, global business, and international allure One generation ago, sushi’s narrow reach ensured that sports fishermen who caught tuna in most of parts of the world sold the meat for pennies as cat food. Today, the fatty cuts of tuna known as toro are among the planet’s most coveted luxury foods, worth hundreds of dollars a pound and capable of losing value more quickly than any other product on earth. So how did one of the world’s most popular foods go from being practically unknown in the United States to being served in towns all across America, and in such a short span of time? A riveting combination of culinary biography, behind-the- scenes restaurant detail, and a unique exploration of globalization’s dynamics, the book traces sushi’s journey from Japanese street snack to global delicacy. After traversing the pages of The Sushi Economy, you’ll never see the food on your plate—or the world around you—quite the same way again.
