Understanding how memories are induced and maintained is one of the major outstanding questions in modern neuroscience. The contribution of research in the chemosensory field to advancing knowledge on learning and memory mechanisms has a long tradition. At the middle of the twentieth century, behavioural data provided evidence that taste and olfactory cues led to robust long-lasting memories after single learning episodes. The peculiar features of some of these types of learning, such as conditioned taste aversion in mammals, were a challenge for learning theory at the time, which was modified in order to integrate the new findings. In the following decades, the reliability of the behavioural models favoured the application of anatomical, neurophysiological and pharmacological techniques prompting great progress in the identification of the specific neural circuits involved in taste and olfactory learning, thanks to the use of a variety of invertebrate and vertebrate models. In spite of the previous views that considered chemosensory learning as simple models of learning, based on its phylogenetic and ontogenetic universality, at present the systems-level approach is revealing the need to focus on the interactions between a variety of sensory, rewarding, cognitive, emotional and motor systems for a full understanding. The great impact on the field of the more recent developments in molecular biology and human neuroimaging techniques are also remarkable. Nowadays understanding the brain processes involved in learning and memory requires a wider approach to the experience-dependent neural plasticity that includes new phenomena such as adult neurogenesis and epigenetics. In fact, research on plasticity in the olfactory system is important in both areas. Moreover, the realms of chemosensory learning and memory have expanded to shield light on social, clinical and applied issues, thus creating a wide multidisciplinary scene. Odors are powerful stimuli that can evoke emotional states, and support learning and memory. Decades of research have indicated that the neural basis for this strong “odor-emotional memory” connection is due to the uniqueness of the anatomy of the olfactory pathways. Indeed, unlike the other sensory systems, the sense of smell does not pass through the thalamus to be routed to the cortex. Rather, odor information is relayed directly to the limbic system, a brain region typically associated with memory and emotional processes. This provides olfaction with a unique and potent power to influence mood, acquisition of new information, and use of information in many different contexts including social interactions. Indeed, olfaction is crucially involved in behaviors essential for survival of the individual and species, including identification of predators, recognition of individuals for procreation or social hierarchy, location of food, as well as attachment between mating pairs and infant-caretaker dyads. Importantly, odors are sampled through sniffing behavior. This active sensing plays an important role in exploratory behaviors observed in the different contexts mentioned above. Odors are also critical for learning and memory about events and places and constitute efficient retrieval cues for the recall of emotional episodic memories. This broad role for odors appears highly preserved across species. In addition, the consistent early developmental emergence of olfactory function across diverse species also provides a unique window of opportunity for analysis of myriad behavioral systems from rodents to nonhuman primates and humans. This, when combined with the relatively conserved organization of the olfactory system in mammals, provides a powerful framework to explore how complex behaviors can be modulated by odors to produce adaptive responses, and to investigate the underlying neural networks. The present research topic brings together cutting edge research on diverse species and developmental stages, highlighting convergence and divergence between humans and animals to facilitate translational research.

Despite its apparent simplicity, the soil-dwelling nematode Caenorhabditis elegans has a surprisingly large capacity to learn and remember. Previous characterization of C. elegans genome and neuronal circuit makes this worm an ideal choice for studying behavior and the mechanisms that underlie it. Through careful behavioral and genetic studies, nematodes have been shown to form both short-term and long-term memory in associative and nonassociative training paradigms. Investigations of mechanosensory habituation and context-dependent learning in C. elegans have uncovered important similarities between learning in C. elegans and learning in vertebrates. These results include the discovery of common behavioral features in nonassociative learning between C. elegans and other organisms along with the identification of conserved genes that govern both nonassociative and associative learning. High-throughput studies have identified hundreds of genes implicated in memory and will potentially lead to insights into the fundamental strategies for encoding memory.

The theory suggests that there is a structural similarity between certain basic brain forms and certain basic mind forms and that the former provide a credible explanation for the latter. The brain is the organ of behavior organization. It structures the solution to the problem of what to do. This is complicated because usually we cannot be certain which behavior would be relatively the best. These processes, taking place between the moment when an uncertainty between behavioral options is recognized and the actual expression of behavior, we regard as ‘taking a decision.’ Such decision making needs to integrate (1) sensory input, (2) the current status reflecting evolutionary and individual history, (3) the available behavioral options, and (4) their expected outcomes. We focus on the decision to behaviorally express an associative memory trace—or not. After sketching the architecture of the chemobehavioral system in larval Drosophila, we present a working hypothesis of odor–taste associative memory trace formation and then discuss whether outcome expectations contribute to the organization of conditioned behavior. We argue that indeed conditioned olfactory behavior is organized according to its expected outcome, namely toward finding reward or escaping punishment, respectively. Conditioned olfactory behaviors are thus not responsive in nature but, rather, are actions expressed for the sake of the sought-for reward and the attempted relief. In addition to the organization of such outcome expectations, we discuss parametric features (‘axes’) of behavioral tasks that we believe bear upon the decision character of the underlying process and discuss whether these features can be found, or may reasonably be sought for, in larval Drosophila. It is argued that rather than trying to draw a line between behavioral processes that reflect decisions and those that are not, it is more useful to ask how strong the decision character of a given behavioral faculty is?
