This volume is the newest release in the authoritative series issued by the National Academy of Sciences on dietary reference intakes (DRIs). This series provides recommended intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for individuals based on age and gender. In addition, a new reference intake, the Tolerable Upper Intake Level (UL), has also been established to assist an individual in knowing how much is "too much" of a nutrient. Abstract: A review of current research focuses on possible effects of increased iron enrichment of wheat flour. Health hazards associated with hereditary iron storage disorders that might accrue from increased iron consumption are assessed. Factors relating to iron metabolism include the importance of the intestinal mucosa in regulating iron absorption, the phenomena of iron storage, the significance of heme and nonheme iron, and the iron compounds of the body. The diseases and disorders characterized by excess body iron are hemosiderosis, hemochromatosis, and certain anemias. While considerable research has been done on iron nutriture, the details of absorption, transport, utilization, storage, and excretion are not well understood. Dietary calculations revealed tha increased flour enrichment would raise the average daily intakes of males and females. It is concluded that this increase will have little impact on the iron accumulation of normal males, and will not precipitate hereditary iron storage disorders. (cj).
