Wovon reden wir, wenn wir von "japanischer", "chinesischer" oder "koreanischer Küche" reden? Der Schwerpunkt "Der globalisierte Gaumen: Ostasiens Küchen auf Reisen" wurde so konzipiert, dass er die vielfältigen Dimensionen und Effekte der Globalisierung beispielhaft an den "Reisen" ostasiatischer Küchen zum Vorschein bringt. Die zwölf Beiträge beleuchten neben Kapital-, Personen und Warenverkehr vor allem historische und kulturelle Faktoren. Originalität, Tradition und Authentizität sind thematische Knotenpunkte. Die Vielfalt der Problemstellungen spiegelt sich in der Bandbreite der methodischen Zugänge und Perspektiven. Abgerundet wird dieser Teil durch zwei Dokumentationen, eine annotierte deutsch-englische Bibliographie zur kulinaristischen Forschung zu Ost- und Südostasien in den Sprachen Englisch, Deutsch, Japanisch, Koreanisch und Französisch und eine Liste akademischer Abschlussarbeiten aus dem deutschsprachigen Raum. Mit der "Kulinaristischen Ökologie" wird ein neuer Denkansatz aus dem Bereich der Lebens- und Umweltwissenschaften für das Feld der Kulinaristik vorgestellt. Dieser soll die ökologischen Konsequenzen und weltweiten Eingriffsfolgen aufzeigen, die dem Groß-Ökosystem 'Erde' und seinen großlandschaftlichen Subsystemen durch Nahrungsbeschaffung für eine ungebremst wachsende Weltbevölkerung erwachsen. Die Beiträge zum Thema "Das Gericht" loten mit den Mitteln von Wortsemantik und Etymologie, von praxisorientierter Begriffsgeschichte wie mit dem Versuch einer optisch unterfütterten Möbel- und Designgeschichte seine Vieldeutigkeit aus, abgerundet durch ein org.editeur.onix.v21.shorts.I@74cd72cf von italienischer Gegenwartsliteratur im Blick auf eine neue Essensmoral. Essen und Trinken sind nutritive Grundbedürfnisse und Lustquellen menschlichen Daseins, nichtdelegierbare Handlungen, kulturtragende Formen der Kommunikation, Anker der Gastlichkeit, Situationen, Symbolsysteme und Rituale, Agrar-, Handel- und Industrieprodukte, Selbstbehauptungsmedien und Bestände der kulturellen Gedächtnisse. All diese Bedeutungen werden im Leben der Menschen mit kommunikativen, juristischen, politischen, religiösen, ästhetischen, hygienischen, ethischen und moralischen Faktoren ihres Zusammenlebens verknüpft. In ihrer Gesamtheit prägt die Bedeutungs- und Faktorenfülle menschliches Leben in einem so umfassenden Maße, dass man vom Essen und Trinken als einem 'sozialen Totalphänomen' gesprochen hat (Marcel Mauss). Soll dieses 'Totalphänomen' in seiner globalen Komplexität erforscht und vermittelt werden, reicht eine singuläre Disziplin nicht hin. Dann wird eine vielstimmige Erkenntnisarbeit benötigt, die das Nachdenken der einzelnen Disziplinen im Horizont einer Theorie und Praxis übergreifenden Sicht zusammenführt. Als Bezeichnung für diese Sicht hat Alois Wierlacher den Ausdruck 'Kulinaristik' geprägt (von lat. culina, die Küche). Er ist ein Klammerbegriff ähnlich wie die Begriffe 'Medizin' oder 'Chemie'. Er fasst die vielseitige Erforschung und Vermittlung der Rolle und Funktion des Essens und Trinkens im Aufbau der Kultur(en), in der Verständigung zwischen den Menschen und im Leben des einzelnen ins Wort. Dieser Aufgabe dient auch das Jahrbuch. Es wird im Auftrag des Kulinaristik-Forums von renommierten Vertretern verschiedener Sachgebiete herausgegeben. Sein kompositorisches Konzept ist nicht die Einsinnigkeit, sondern eine dem Gegenstand adäquate Vielfalt von Formen und Farben der Annäherungen.

Band 3 des Jahrbuchs für Kulinaristik widmet sich zwei hochaktuellen Themen der historischen und sozialwissenschaftlichen Ernährungsforschung, zum einen dem Fleischkonsum und Fleischverzicht (Teil I) und zum anderen der Ernährung im Kontext des aktuellen Fluchtgeschehens (Teil II). Beide Themen machen deutlich, dass es sich bei der Ernährung in der Moderne um ein Phänomen handelt, für das globale Beziehungen und Verflechtungen konstitutiv sind. Die Tier- und Fleischproduktion sowie der damit verbundene Konsum berühren weltweite ökonomische, ökologische, soziale und gesundheitliche Konflikte und Fragestellungen. Das migrantische Essen bringt die "fremde" Küche in den lokalen Kontext. Bei beiden Themenstellungen wird ebenso deutlich, dass Ernährung nicht nur eine physische Funktion, sondern umfangreiche soziale und kulturelle Funktionen erfüllt. Denn nicht zuletzt geht es immer auch um eine identitäre Selbst- oder Fremdbeschreibung im Hinblick darauf, was man isst oder eben nicht (!) isst. Das gilt für karnivore oder vegetabile Ernährungsweisen ebenso wie für Selbst- und Fremdbilder, die über den Konsum spezifischer Regionalküchen konstruiert werden. Der Teil Varia bietet ein umfangreiches Literaturreview zu den Veränderungen der Ernährung in Folge der Corona-Pandemie, einen Tagungsbericht zu geschlechtsspezifischen Perspektiven auf Ernährungssysteme sowie einen historischen Beitrag zur Geschichte des Bieres in der Weinregion Kurpfalz.

Merry White traces Japan’s coffee craze from the turn of the twentieth century, when Japan helped to launch the Brazilian coffee industry, to the present day, as uniquely Japanese ways with coffee surface in Europe and America. She shows how coffee and coffee spaces have been central to the formation of Japanese notions about the uses of public space, social change, modernity, and pleasure. The three concepts mentioned in the title of this volume imply the contact between two or more literary phenomena; they are based on similarities that are related to a form of ‘travelling’ and imitation or adaptation of entire texts, genres, forms or contents. Transfer comprises all sorts of ‘travelling’, with translation as a major instrument of transferring literature across linguistic and cultural barriers. Transfer aims at the process of communication, starting with the source product and its cultural context and then highlighting the mediation by certain agents and institutions to end up with inclusion in the target culture. Reception lays its focus on the receiving culture, especially on critcism, reading, and interpretation. Translation, therefore, forms a major factor in reception with the general aim of reception studies being to reveal the wide spectrum of interpretations each text offers. Moreover, translations are the prime instrument in the distribution of literature across linguistic and cultural borders; thus, they pave the way for gaining prestige in the world of literature. The thirty-eight papers included in this volume and dedicated to research in this area were previously read at the ICLA conference 2016 in Vienna. They are ample proof that the field remains at the center of interest in Comparative Literature.

For more than three years, anthropologist John Osburg accompanied wealthy Chinese businessmen as they courted clients, partners, and government officials. Now he invites readers along on his journey through the highly gendered world of luxury karaoke clubs, saunas, and massage parlors—places designed to cater to the desires of elite men. Within these spaces, a masculinization of business is taking place. Chinese students are the largest international student population in the world, and Japan attracts more of them than any other country.
