Toward the end of the fifteenth century, Spanish Christians near the border of Castile and Muslim-ruled Granada held complex views about religious tolerance. People living in frontier cities bore much of the cost of war against Granada and faced the greatest risk of retaliation, but had to reconcile an ideology of holy war with the genuine admiration many felt for individual members of other religious groups. After a century of near-continuous truces, a series of political transformations in Castile—including those brought about by the civil wars of Enrique IV's reign, the final war with Granada, and Fernando and Isabel's efforts to reestablish royal authority—incited a broad reaction against religious minorities. As Thomas Devaney shows, this active hostility was triggered by public spectacles that emphasized the foreignness of Muslims, Jews, and recent converts to Christianity. Enemies in the Plaza traces the changing attitudes toward religious minorities as manifested in public spectacles ranging from knightly tournaments, to religious processions, to popular festivals. Drawing on contemporary chronicles and municipal records as well as literary and architectural evidence, Devaney explores how public pageantry originally served to dissipate the anxieties fostered by the give-and-take of frontier culture and how this tradition of pageantry ultimately contributed to the rejection of these compromises. Through vivid depictions of frontier personalities, cities, and performances, Enemies in the Plaza provides an account of how public spectacle served to negotiate and articulate the boundaries between communities as well as to help Castilian nobles transform the frontier's religious ambivalence into holy war.

From the banquets of kings and nobles to the daily struggle for the subsistence of the poor, food was already much more than a biological necessity in the Middle Ages: it was a social phenomenon full of meaning. In this book all the implications and meanings that food had on the Iberian Peninsula between the 13th and 15th centuries are analyzed. Historical assessment of the region is particularly rewarding because of the quantity and variety of historical sources, and because of the coexistence in medieval Iberia of the three great monotheistic religions: Christianity, Judaism and Islam. Taking both economic and sociological perspectives, every aspect of food is analyzed, from the commercialization of food production to its consumption, and from the evolution of culinary techniques to table manners.

A lo largo de 6 capítulos, este libro plantea los aspectos más importantes a considerar en la obtención de aceites de oliva vírgenes. El primer capítulo describe cómo se han de recibir las aceitunas en el patio de almazara, cuyo fruto será tratado mediante operaciones de limpieza, lavado, despalillado, toma de muestras, pesaje y acopio. El segundo capítulo analiza las distintas tecnologías que han usado históricamente las almazaras españolas para obtener el aceite de oliva virgen, actualmente basada en la molturación por molinos metálicos de martillos, batido y centrifugado. El tercer capítulo plantea la influencia ejercida por los métodos adoptados para el proceso almazarero sobre la calidad final obtenida en los aceites de oliva vírgenes, analizando además los distintos tipos de subproductos que se generan y su aprovechamiento económico-energético. El cuarto capítulo plantea los análisis y controles básicos realizados en las almazaras, con el objetivo de asegurar la calidad sobre los aceites de oliva vírgenes obtenidos, así como los equipos e instrumentos empleados para ello. El quinto capítulo trata sobre la prevención de riesgos laborales en las almazaras, determinando las medidas preventivas, los primeros auxilios y las protecciones de seguridad e higiene que se han de adoptar. El sexto y último capítulo está dedicado a los residuos y subproductos generados en las almazaras, que abarca la clasificación y características físico-químicas de los mismos, los indicadores ambientales y su gestión adecuada para evitar la contaminación medioambiental y buscar un aprovechamiento económico-energético.
