Lactose intolerance is the inability some people have to digest lactose, the sugar found in milk. It is caused by the absence or a low level of lactase in the small intestine of many people around the world. Typical symptoms of lactose intolerance are, among others, nausea, gas, diarrhea or belly pain, always depending on the amount of lactose the person can tolerate. This books invites you to travel to the universe of someone who is intolerant to lactose. Going through the life of Oriol Sans, president and founder of ADILAC —the Association of lactose intolerant people in Spain—, you will learn about all available information and progress made concerning this food intolerance. Oriol's account of his own experience, as well as his very empathetic attitude will help you to easily understand lactose intolerance from a medical, dietetic and mostly personal point of view. This book includes a questionnaire with 100 questions and answers about lactose intolerance collected by Oriol Sans throughout the years he has devoted to find out different aspects about this intolerance, including product recommendations, diagnosis methods, what to do in a restaurant and so on.

It would be difficult to imagine a more appropriate means of marking the Jubilee of the Dairy Research Laboratory, Division of Food Processing, CSIRO, than a publication on whey and lactose processing. The genesis of the Laboratory in 1939 was when the Australian dairy industry was very largely based on the supply of cream from farms to numerous butter factories, the skim milk being fed to pigs. By the mid-1940s, when Geof frey Loftus-Hills was appointed in charge ofthe fledgling Dairy Research Section, the main objective of the Section-the full utilization of the con stituents of milk for human food-had been firmly established. Over the next two decades progress towards this objective was exemplified by the scientific and technological contributions made in specialized milk powders for use in recombining and in the manufacture of casein and cheese. Meanwhile farming practices changed from cream production to the supply of refrigerated whole milk to the factories. By the late 1960s the increasing production of cheese and casein had re sulted in almost 2 million tonnes of whey per annum. This represented not only a waste disposal problem, but also under-utilization of over 100000 t of milk solids. The Laboratory had now grown to a staff of around 70, so it was possible to allocate some resources to this extra challenge.

Lactose: Evolutionary Role, Health Effects, and Applications is a professional reference that addresses the latest research from the fields of food science, nutritional science, and evolutionary biology. The book presents an overview of the qualities of lactose, beginning with the intriguing evolutionary biology advantages linked to lactose digestion in humans. In addition, the book addresses how lactose’s physiological effects differ from other saccharides and impact human health. The rationale for the application of lactose as an ingredient in products—for example, as a pharmaceutical carrier—is also discussed. Written in close collaboration by key experts with years of study and practice, Lactose: Evolutionary Role, Health Effects, and Applications is the first book to address this topic exclusively. Scientists and nutritionists in academia and the dairy and food industry, as well as health professionals, will benefit from this valuable resource. Addresses hot topics, such as evolutionary aspects, lactose digestion and intolerance, lactose metabolism and gut microbial fermentation including their physiological impact, food and pharmaceutical applications, and lactose in the dairy production chain Serves as a first-of-its kind professional reference on lactose, addressing the latest research in food science, nutritional science, and evolutionary biology Presents material written by leading experts in lactose in an easily accessible format

Lactose is a unique disaccharide found exclusively in the milk of mammals. This sugar has a crucial role in nourishing newborn and young mammals; however, some adults have difficulties in fully metabolizing lactose. Despite lactose intolerance in the population, the dairy industry produces 400,000 tons of crystalline lactose worldwide. The food and pharmaceutical industries use lactose as well as lactose derivatives in a wide variety of products. This book reviews some aspects of lactose properties and synthesis as well as recent advances in the recovery of lactose and lactose derivatives from cheese whey.

The series is the leading reference source on dairy chemistry, providing in-depth coverage of milk proteins, lipids, lactose, water and minor constituents. Advanced Dairy Chemistry Volume 3: Lactose, Water, Salts, and Minor Constituents, Third Edition, reviews the extensive literature on lactose and its significance in milk products. This volume also reviews the literature on milk salts, vitamins, milk flavors and off-flavors and the behaviour of water in dairy products. Most topics covered in the second edition are retained in the current edition, which has been updated and expanded considerably. New chapters cover chemically and enzymatically prepared derivatives of lactose and oligosaccharides indigenous to milk. P.L.H. McSweeney Ph.D. is Associate Professor of Food Chemistry and P.F. Fox Ph.D., D.Sc. is Professor Emeritus of Food Chemistry at University College, Cork, Ireland.

Topics include genetic, geographic, and historic considerations; physiopathologic considerations (effects on gastrointestinal transit, colonic salvage of nonabsorbed lactose); diagnosis and screening; clinical consequences in adults; clinical consequences in children (milk supplementation, acquired carbohydrate intolerance in children); and development of low-lactose products. In the final section, nutritional implications of lactose intolerance for the clinician, the dairy industry and public health professionals are discussed. (rkm).
