"Vin au naturel, vin naturel, vin nature : l'idée est d'abord de marquer la rupture avec la viticulture intensive, aussi peu respectueuse du sol, de la plante et du terroir que du consommateur. Cette idée prospère sur le terreau d'une viticulture globalement soumise aux exigences productivistes de l'industrie agroalimentaire, et jugée comme telle inacceptable par une part non négligeable des vignerons de France et d'ailleurs. Le vin 'naturel' rejoint la notion de culture 'biologique', mais avec un projet étendu à l'ensemble du processus de production du vin, de la vigne à la mise en bouteille, associant ainsi dans une même démarche le travail du viticulteur et celui du vivificateur, réunis en une seule personne, le vigneron. Le vin 'naturel' résulte du choix d'une agriculture qui s'adapte aux écosystèmes, à l'opposé d'une industrie agroalimentaire qui veut adapter les écosystèmes. Loin de la conception industrielle qui use et abuse des engrais, des pesticides, des levures et bactéries 'sélectionnées', du sucre de chaptalisation, du soufre, des acidifiants, etc., il s'agit donc de la prise en compte de cette matière vivante qu'est le vin. Là où beaucoup d'approximations entourent l'idée de vin 'naturel', voici un livre essentiel qui apporte un éclairage précis, synthétique et documenté : savoir de quoi on parle, mettre de l'ordre dans toutes les notions évoquées la plupart du temps sans grand sérieux ; comprendre la vie complexe du vin et les dangers que peuvent rencontrer des vins 'naturellement' plus délicats ; faire l'état des lieux d'une mouvance qui s'est constituée dans une pluralité de choix, mais toujours dans un esprit commun de prise en compte du caractère vivant du vin.
