On doit l'excellence des vins de Bourgogne à Philippe Le Hardi qui, en 1395, interdit strictement, au profit du seul cépage Pinot noir, la plantation ou la conservation du cépage Gamay plus commun et à haut rendement quantitatif. Mais on la doit aussi à une hiérarchisation de son territoire en "climats". La Bourgogne a fait le choix de la hiérarchie des "climats" comme principe de son organisation viticole. Chacun des "climats", on en compte plus de 1200, est lié à l’interaction entre divers facteurs biophysiques (géologie, sol, pente, exposition, conditions météorologiques, cépage, etc.) et humains (culture viticole, taille, parcellaire, vinification, etc.) qui fait de cette classification viticole un fait unique dans la grande diversité des vignobles à l’échelle du monde. La mosaïque des climats constitue avant tout un parcellaire géométrique ancien, dessiné par les limites cadastrales, les clos et les chemins, parfaitement lisible dans le paysage. Mais, loin de se réduire à un paysage viticole, le patrimoine visible s’étend également à l’ensemble des sites urbains, notamment Dijon et Beaune, véritables lieux historiques du pouvoir politique, culturel, religieux et de la force économique et commerciale, monuments ou éléments structurants ayant participé à l’émergence, au maintien et à l’exploitation de ces climats. Cet ouvrage richement illustré retrace les grandes étapes de la construction des climats du vignoble de Bourgogne et nous emmène à la découverte de ce patrimoine millénaire exceptionnel : parcelles, murs, meurgers, cabottes, bâti viti-vinicole des villes et des villages de la côte bourguignonne (côte de Nuits et côte de Beaune).
