Inhaltsangabe:Einleitung: Der SÜDWESTRUNDFUNK sendete am 20.9. einen Beitrag mit dem Obertitel „Vitaminreiche Ernährung“. Demzufolge bestehe folgender Verdacht: Gemüse und Obst unterliegen einem dramatischen Vitaminschwund. Der Verdacht wird zurückgewiesen. Anbietern von Nahrungsergänzungsmitteln käme ein „Vitaminschwund“ jedoch recht, als Argument für ihre Produkte. Laut dem Beitrag werden in Deutschland jährlich 1 Mrd. Euro für Nahrungsergänzungsmittel ausgegeben. BERNER (1998) beschreibt einen Rückgang im Vitalstoffgehalt unserer Nahrung. Dabei bezieht er sich auf einen Zeitraum von 15 Jahren. Berner ist Naturwissenschaftler mit dem Forschungsschwerpunkt Ernährung. Bereits 1998 war eine Firma nach ihm benannt. Die H.-G. Berner GmbH bietet „Vitalstoffkonzentrate“ zum Verkauf an. Dies erfährt man auf der Umschlagseite seines Buches. In der vorliegenden Arbeit wurde nachgeforscht ob sich die Nährstoffgehalte von Gemüse verändert haben. Vor Jahren verzehrte der Verbraucher wahrscheinlich noch mehr Wildgemüse, vor allem auf dem Land. Vergleicht man Wildgemüse mit dem „modernen“ Salat, werden sehr unterschiedliche Nährstoffgehalte deutlich. Nach FRANKE enthält Löwenzahn das Neunfache an Vitamin C gegenüber Kopfsalat, mit 13 mg Vitamin C/100 g Frischmasse. Der Gehalt an Kalium ist bei Löwenzahn mehr als doppelt so hoch. Sauerampfer enthält fast das 8-fache an Eisen, mit 8,5 mg/100 g, im Vergleich zum Kopfsalat. Dabei muss jedoch beachtet werden, dass vom Kopfsalat täglich leicht größere Mengen verzehrt werden können, als von Löwenzahn und anderem. In dieser Arbeit werden nun allerdings die Gehalte der gleichen Gemüsearten verglichen, welche zu unterschiedlichen Zeitpunkten untersucht wurden. In einem Vergleich von HÖHN & KÜNSCH (2004) wird folgende Frage untersucht: War Gemüse früher wirklich nährstoffreicher? Sie untersuchten das Gemüse auf Veränderungen, indem sie ältere und neuere Nährstoffdaten verglichen. Innerhalb von 21 bis 42 Jahren wurde verglichen. Im Ergebnis beschreiben sie in den meisten Fällen unveränderte Gehalte. Erheblich vermindert sind jedoch Magnesium, Kupfer, Vitamin B2 und Vitamin C. Die Nährstoffe sind um 22 bis 57% zurück gegangen. MAYER (1997) befasste sich ebenfalls mit diesem Thema. Sie untersuchte Obst und Gemüse, auf Mineralstoffe. Die verglichenen Nährstoffgehalte waren in einem Abstand von 50 Jahren veröffentlicht worden. Bei Obst verringerten sich die Gehalte an Magnesium, Eisen, Kupfer und Kalium bedeutsam. [...]

The first book bearing the title of this volume, Inorganic Plant Nutrition, was written by D. R. HOAGLAND of the University of California at Berkeley. As indicated by its extended title, Lectures on the Inorganic Nutrition of Plants, it is a collection of lectures - the JOHN M. PRATHER lectures, which he was invited in 1942 to give. at Harvard University and presented there between April 10 and 23 of that year - 41 years before the publication of the present volume. They were not "originally intended for publication" but fortunately HOAGLAND was persuaded to publish them; the book appeared in 1944. It might at first blush seem inappropriate to draw comparisons between a book embodying a set of lectures by a single author and an encyclopedic volume with no less than 37 contributors. But HOAGLAND'S book was a compre hensive account of the state of this science in his time, as the present volume is for ours. It was then still possible for one person, at least for a person of HOAGLAND'S intellectual breadth and catholicity of interests, to encompass many major areas of the entire field, from the soil substrate to the metabolic roles of nitrogen, potassium, and other nutrients, and from basic scientific topics to the application of plant nutritional research in solving problems encountered in the field.
