This volume contains the Proceedings of the Fifteenth American Peptide Symposium (15APS) held in Nashville, Tennessee, on June 14-19, 1997. This biennial meeting was jointly sponsored by the American Peptide Society and Vanderbilt University. The American Peptide Symposium is the most important international peptide meeting, and attracts the largest number of attendees and attention. The attendance of 1081 participants from 37 countries was lower than the two previous Symposia. However, the number of participating countries was the largest. Thus, it was gratifying to see that this meeting retained both its international flavor and participant loyalty at a time when there are many more symposia held each year on similar subjects. The scientific program comprised 124 oral and 550 poster presentations. The oral presentations together with selected poster presentations are included in this proceedings volume. Together they constitute the most up-to-date advances in peptide science.

This book is a comprehensive study of the subject of ionic interactions in macromolecules. The first parts of the book review and analyze the conventional treatments of fixed charges (e.g. in polyelectrolytes and polyampholytes), including screening and condensation by mobile ions. The interaction of ions with less polar sites on the macromolecule (e.g. amide bonds), and the origin of the lyotropic effects (focusing on binding versus condensation) will also be extensively addressed. Conventional food safety and quality research have traditionally dealt with the whole organism or food product, either plant or animal, or with the microorganisms that associate with these food-producing plants and ani mals at various stages of growth, development, and maturation. However, conventional research methods no longer are sufficient to bring about the improvements in quality and safety of foods that are demanded in today's marketplace by increasingly educated and sophisticated consumers. Improved quality has generally been thought to mean (l) unblemished products, particularly fruits and vegetables, and (2) the desired functional ity of protein, carbohydrates, and fats in grain oilseeds and the like to achieve the intended purpose in processing foods; for example, dough char acteristics to make bread or pasta. However, it also means the year-round ready availability of nutritious and appealing choices in all food groups that can be quickly and easily prepared. This promotes optimum nutrition, particularly necessary in children, the elderly, and special-needs groups, and it allows health conscious consumers to match their calorie intake with indi vidual needs to achieve and maintain desirable body weight.
