The first source about the dishes in Ottoman cuisine and their recipes is Al-Baghdadi's cookbook called Kitâbü't-tab'îh, translated by Muhammed bin Mahmud Şirvani (1375-1450). At the end of the examinations, it was seen that about 80 recipes were added to the end of the book in which he translated Shirvani. Therefore, the oldest information found on Ottoman food culture is these added recipes. This work, which is the first of the independent cookbooks written in the Ottoman period, is undoubtedly one of the rare products of our cultural history. While describing Arabic and Turkish dishes and some drinks, Shirvani used the knowledge brought by his medicine and explained which diseases they would be good for.
