People found new ways of enjoying their food, putting together their domestic environments or presenting themselves in public. During the last few decades the various remnants of Ottoman material life have attracted growing public attention. Ottoman cuisine and vernacular architecture are cherished not only by experts, but also by Turkish urban dwellers increasingly proud of their cultural heritage, to say nothing of tourists. But even so, serious research in these matters has been slow to develop. It is the aim of the present volume to show what avenues research has taken to date, point out the numerous unexploited or under-exploited primary sources and thus to advance our understanding of this important aspect of Ottoman history. Ottoman charitable endowments (waqf) constituted an enduring monument to imperial beneficence and were important instruments of policy. One type of endowment, the public soup kitchen (imaret) served travelers, scholars, pious mystics, and local indigents alike. Constructing Ottoman Beneficence examines the political, social, and cultural context for founding these public kitchens. It challenges long-held notions about the nature of endowments and explores for the first time how Ottoman modes of beneficence provide an important paradigm for understanding universal questions about the nature of charitable giving. A typical and well-documented example was the imaret of Hasseki Hurrem Sultan, wife of Sultan Süleyman I, in Jerusalem. The imaret operated at the confluence of imperial endowment practices and Ottoman food supply policies, while also exemplifying the role of imperial women as benefactors. Through its operations, the imaret linked imperial Ottoman and local Palestinian interests, integrating urban and rural economies.

The first source about the dishes in Ottoman cuisine and their recipes is Al-Baghdadi's cookbook called Kitâbü't-tab'îh, translated by Muhammed bin Mahmud Şirvani (1375-1450). At the end of the examinations, it was seen that about 80 recipes were added to the end of the book in which he translated Shirvani. Therefore, the oldest information found on Ottoman food culture is these added recipes. This work, which is the first of the independent cookbooks written in the Ottoman period, is undoubtedly one of the rare products of our cultural history. While describing Arabic and Turkish dishes and some drinks, Shirvani used the knowledge brought by his medicine and explained which diseases they would be good for.
