Low Calorie Sweeteners written by Antonietta Corti and has been published by Karger Medical and Scientific Publishers this book supported file pdf, txt, epub, kindle and other format this book has been release on 1999-01-01 with Technology & Engineering categories.

The field of artificial sweeteners is a complex one: each sweetener is unique in terms of its composition and taste, and those allowed by legislation vary according to country. Furthermore, they exist certain controversial issues, i.e. are sweeteners really useful in weight management or as an ingredient for people with diabetes, and do they not, through a subtle biological mechanism, trigger appetite rather than reduce it? This book provides a complete update on all aspects of science about sweeteners. One of the matters discussed is whether there is a difference between 'natural' and 'synthetic' substances from the point of view of safety. Attention is also paid to new developments and applications of sweeteners, as well as to the usefulness and relevance of low-calorie sweeteners in nutrition and as one aspect of weight control and calorie intake. Lastly, consumer preferences and the differing perceptions, according to geographical regions, of sweetener-containing products are evaluated. The book concludes with a section on world trade rules.

Mini Nutritional Assessment Mna written by Bruno J. Vellas and has been published by Karger Medical and Scientific Publishers this book supported file pdf, txt, epub, kindle and other format this book has been release on 1999 with Medical categories.

This book is the first of a new series which will present the proceedings of the newly established Nestlé Nutrition Workshop Series: Clinical & Performance Programme aimed at adult nutrition. Undernutrition is a common phenomenon in elderly people, and malnutrition reaches significant levels in those being in hospital, nursing homes or home care programs. Consequences of malnutrition often go unrecognised owing to the lack of specific validated instruments to assess nutritional status in frail elderly persons. The Mini Nutritional Assessment (MNA) provides a single, rapid assessment of nutritional status in the elderly of different degrees of independence, allowing the prevalence of protein-energy malnutrition to be determined and to evaluate the efficacy of nutritional intervention and strategies. Easy, quick and economical to perform, it enables staff to check the nutritional status of elderly people when they enter hospitals or institutions and to monitor changes occurring during their stay. Moreover, the MNA is predictive of the cost of care and length of stay in hospital. This publication will be of immense assistance to heads of geriatric teaching units, teachers in nutrition, clinicians general practitioners and dieticians, enabling them to better detect, recognise and start treatment of malnutrition in the elderly.

Gardens Of New Spain written by William W. Dunmire and has been published by University of Texas Press this book supported file pdf, txt, epub, kindle and other format this book has been release on 2012-08-17 with Social Science categories.

When the Spanish began colonizing the Americas in the late fifteenth and sixteenth centuries, they brought with them the plants and foods of their homeland—wheat, melons, grapes, vegetables, and every kind of Mediterranean fruit. Missionaries and colonists introduced these plants to the native peoples of Mexico and the American Southwest, where they became staple crops alongside the corn, beans, and squash that had traditionally sustained the original Americans. This intermingling of Old and New World plants and foods was one of the most significant fusions in the history of international cuisine and gave rise to many of the foods that we so enjoy today. Gardens of New Spain tells the fascinating story of the diffusion of plants, gardens, agriculture, and cuisine from late medieval Spain to the colonial frontier of Hispanic America. Beginning in the Old World, William Dunmire describes how Spain came to adopt plants and their foods from the Fertile Crescent, Asia, and Africa. Crossing the Atlantic, he first examines the agricultural scene of Pre-Columbian Mexico and the Southwest. Then he traces the spread of plants and foods introduced from the Mediterranean to Spain’s settlements in Mexico, New Mexico, Arizona, Texas, and California. In lively prose, Dunmire tells stories of the settlers, missionaries, and natives who blended their growing and eating practices into regional plantways and cuisines that live on today in every corner of America.

Fundamentals Of Organic Chemistry written by John McMurry and has been published by this book supported file pdf, txt, epub, kindle and other format this book has been release on 1998 with Chemistry, Organic categories.

Written for the short course--where content must be thorough but to-the-point--Fundamentals of Organic Chemistry provides an effective, clear, and readable introduction to the beauty and logic of organic chemistry. McMurry presents only those subjects needed for a brief course while maintaining the important pedagogical tools commonly found in larger books. With clear explanations, thought-provoking examples, and an innovative vertical format for explaining reaction mechanisms, Fundamentals takes a modern approach: primary organization is by functional group, beginning with the simple (alkanes) and progressing to the more complex. Within the primary organization, there is also an emphasis on explaining the fundamental mechanistic similarities of reactions. Through this approach, memorization is minimized and understanding is maximized.
