Fleshy Fruits are a late acquisition of plant evolution. In addition of protecting the seeds, these specialized organs unique to plants were developed to promote seed dispersal via the contribution of frugivorous animals. Fruit development and ripening is a complex process and understanding the underlying genetic and molecular program is a very active field of research. Part of the ripening process is directed to build up quality traits such as color, texture and aroma that make the fruit attractive and palatable. As fruit consumers, humans have developed a time long interaction with fruits which contributed to make the fruit ripening attributes conform our needs and preferences. This issue of Frontiers in Plant Science is intended to cover the most recent advances in our understanding of different aspects of fleshy fruit biology, including the genetic, molecular and metabolic mechanisms associated to each of the fruit quality traits. It is also of prime importance to consider the effects of environmental cues, cultural practices and postharvest methods, and to decipher the mechanism by which they impact fruit quality traits. Most of our knowledge of fleshy fruit development, ripening and quality traits comes from work done in a reduced number of species that are not only of economic importance but can also benefit from a number of genetic and genomic tools available to their specific research communities. For instance, working with tomato and grape offers several advantages since the genome sequences of these two fleshy fruit species have been deciphered and a wide range of biological and genetic resources have been developed. Ripening mutants are available for tomato which constitutes the main model system for fruit functional genomics. In addition, tomato is used as a reference species for climacteric fruit which ripening is controlled by the phytohormone ethylene. Likewise, grape is a reference species for non-climacteric fruit even though no single master switches controlling ripening initiation have been uncovered yet. In the last period, the genome sequence of an increased number of fruit crop species became available which creates a suitable situation for research communities around crops to get organized and information to be shared through public repositories. On the other hand, the availability of genome-wide expression profiling technologies has enabled an easier study of global transcriptional changes in fruit species where the sequenced genome is not yet available. In this issue authors will present recent progress including original data as well as authoritative reviews on our understanding of fleshy fruit biology focusing on tomato and grape as model species.

Fruit and vegetables nutritional value has been gaining interest for consumers and it plays an important role for human health and diet. The nutritional value is generally represented by the accumulation of bioactive molecules that are in large part constituted by secondary metabolites and antioxidant compounds. The biosynthesis of these compounds mainly occurs thorough the phenylpropanoid pathway. The accumulation of bioactive compounds is highly dependent on the plant species considered, cultivar/genotype, agronomic management, and environmental conditions before harvest and during postharvest. The preservation of the nutritional value after harvest is influenced by storage conditions, packaging systems, and postharvest treatments. Fruits and vegetables bioactive compounds content is very important for consumers, but it is also important for the produce preservation during the distribution chain as, for instance, produce with higher antioxidant compounds also have a longer shelf life. Among bioactive compounds, ascorbic acid, phenolic compounds, carotenoids, and glucosinolates represent the most important groups. The storage conditions and postharvest technologies can help to reduce the degradation or losses of bioactive compounds and even promote their accumulation. The physiological, biochemical and molecular changes can be correlated to the nutraceutical variations in pre- and postharvest stages. The plant hormones such as ethylene and abscisic acid possess a pivotal role in the regulation of fruit and leaf senescence of produce and directly influence their nutraceutical value. The regulation of the phenylpropanoids biosynthetic pathway can lead to the preservation or improvement of produce nutraceutical value. Therefore, understanding how the accumulation of bioactive compounds can be enhanced or preserved is becoming crucial in crop and product quality. The availability of advanced molecular tools allows fast and accurate transcriptome profiling that can help in the identification of the main gene clusters that are activated or repressed under different conditions. Such data coupled with metabolomics information can provide useful information for production and postharvest management of produce with high nutritional value. In this Research Topic we collect articles focused on: new insights on biosynthesis and catabolism of bioactive molecules in fruit and vegetables and the relationship with growing conditions and abiotic stresses; the regulation of biosynthesis of bioactive compounds in fruit and/or vegetables during development and ripening: role of plant hormones and elicitors; new postharvest technologies or treatments able to promote or preserve bioactive compounds of produce; potential role of molecular studies and genetic improvement for enhanced accumulation of bioactive compounds on fresh produce.

Grapes (e.g. Vitis vinifera L.) are one of the more important fruit crops from an economic standpoint with world market values over 550 million US dollars in 2007 and 2008, second to apples (United States Department of Agriculture). While a satisfactory level of ripeness is of primary concern, the quality of wine grapes is determined the contribution of secondary metabolites. econdary metabolites provide the color, aroma, flavor, and tactile sensations associated with wine and are believed to be of biological value to humans. Anthocyanins provide the color to red grapes and wine while flavonols are thought to provide color stability to wine through copigmentation with anthocyanins. Proanthocyanidins (PAs) provide astringency or a tactile response in the mouth, which is a primary element of wine quality. For the plant, secondary metabolites are involved in signaling, seed dissemination, and protection against biotic and abiotic stresses. In this work, the temperature of field-grown grapes, Vitis vinifera L. cv. Merlot, was manipulated by cooling and heating berries relative to ambient temperatures during three growing seasons. A range of thermal time was investigated by delivering cold air during the day (Cool) or warm air at night (Heat). Additionally, the effect of reducing the diurnal temperature range (DTR) was investigated by daytime cooling and nighttime heating without a significant change in the accumulated thermal time compared to ambient berries. The impact on PAs was studied by imposing treatments from fruit set to vé́raison during active PA biosynthesis. Treatments imposed from véraison to harvest maturity ([greater or equal to] 22.0°Brix) were intended to assess the impact on flavonol and anthocyanin accumulation and changes in PAs during ripening. In 2008, experiments focused on PA accumulation by examining metabolites and the expression of genes involved in PA biosynthesis at ten-day intervals up to véraison. Treatment effects described here demonstrate a complex response of grape berries to shifts in temperatures. The data suggest periods of sensitivity with respect to secondary metabolism that may dictate the response to changes in temperatures. To the authors' knowledge, the data presented here is the first of it's kind; examining the effect of temperature on active PA biosynthesis in both the skin and seed of grape as well as the effect of altering the DTR of berries grown under field conditions. This research has implications in understanding fundamental plant responses to their environment and the impact of climate shifts and seasonal temperature variations on grape berry composition.
