O campo das alergias alimentares tardias tem sido considerado mais como uma arte clínica do que uma ciência baseada em achados laboratoriais. Dessa forma existe uma forte tendência de os clínicos convencionais dizerem que, se o mecanismo biológico ou imunológico não é conhecido, então a alergia alimentar não existe. Especialmente se os sintomas dos pacientes não se encaixam nos diagnósticos convencionais do código internacional de doenças. Mas, para cuidar dos portadores de alergias alimentares, é necessária a prática de uma arte que combina a habilidade clínica de coletar todos os sintomas dos pacientes, baseada na experiência e compreensão de bases científicas, resultando em ações terapêuticas efetivas que satisfaçam a necessidade de alívio dos sintomas dos pacientes. Assim sendo a capacidade de fazer as correlações entre o conjunto dos sintomas dos enfermos com os possíveis agentes causais e o estabelecimento objetivo dessa relação de causalidade é mais importante para o clínico que quer ajudar seu paciente, que um completo conhecimento dos mecanismos biológicos subjacentes ao processo da enfermidade. Portanto, por meio de métodos que são explicados neste livro, os leitores poderão compreender a arte e a ciência do manejo nutricional de pacientes portadores de afecções crônicas causadas por alergias tardias, e com esse entendimento auxiliarão a si mesmos, a seus médicos e nutricionistas a cuidar da recuperação de sua saúde, usando do remédio mais antigo da medicina ocidental e oriental: os alimentos.
