They are the most important of the nutritive ingredients of our food because they make muscle, blood, etc. One of the properties of albumen is coagulation. This can be produced in the white of an egg by the application of heat. We all know that when an egg has been immersed during a few minutes in boiling water, the colorless Shiny liquid is converted into the solid white to which it owes its name.
