The term Asia is a problematic and highly artificial construct, because hardly anything - not language, religion, politics, or even geography - unites this huge area. Within the context of this study, however - which focuses on parts of South, Southeast, and East Asia (home to the vast majority of the population) - there exists a unifying factor of paramount significance: rice. Not only is rice the staple food in these regions, it is the focal point of a pervasive set of interrelated beliefs and practices. For those who consume it, this foodstuff is considered divinely given and is felt to sustain them in a special way, one that may be understood as constitutional and even spiritual. This volume explores beliefs and practices relating to rice as they are made manifest in the unique arts and material cultures of the various peoples considered. Incorporating essays by twenty-seven authorities representing a wide variety of cultures and writing from diverse perspectives, the book is astounding in its polyphony. The thirty-five lavishly illustrated essays describe rice-related rituals and beliefs in parts of Thailand, Nepal, India, Indonesia, the Philippines, Vietnam, Japan, China, and Korea. Throughout, the juxtaposition of magnificent photographs of works of art - paintings, prints, ceramics, textiles, lacquerware, and sculpture - with objects of a more humble nature – agricultural implements, rice-straw ornaments, cooking utensils, baskets, puppets, votive plaques, and more - serves to indicate the striking pervasiveness of rice in all aspects and all walks of life. Wedding ceremonies, parades, festivals, celebrations of birth, rites held to honor the rice goddess, and those performed to ensure success at every step in the rice-growing cycle are vividly described and illustrated with striking field photographs. The whole gives the reader the rare opportunity to compare similarities and differences in how a rich array of Asian cultures views the food that nourishes them.

Cooking Rice With An Italian Accent written by Father Giuseppe Orsini and has been published by Macmillan this book supported file pdf, txt, epub, kindle and other format this book has been release on 2014-06-10 with Cooking categories.

It seems safe to say that most Americans whose roots are not in Italy consider pasta the foundation of Italian cuisine (with the possible exception of those who don't see beyond pizza). There's justification in that, of course: In Italy pasta is indeed ever present, in hundreds of forms, served alone and in combination with just about any edible meat, plant, or seafood one can think of, and with an endless variety of sauces, even one named for she who practices the oldest profession. But wait till you see the great dishes that Father Orsini has brought you from the farms and cooks of northern Italy, wonderful dishes based on--rice! No matter what you think, rice was not brought to Italy by Marco Polo. The techniques of rice farming (and presumably some seeds or cuttings) came to Italy in the ninth century with the Arab invasion of Sicily. Rice farming prospered against great odds, thanks to the determination and hard work of Sicilian farmers and the money of the Sicilian elite. And even though Father Orsini's own roots are in the country's south, he readily concedes that northern Italy has raised cooking rice to an art. Cooking Rice with an Italian Accent! will guide you through that art museum of Sicilian rice dishes, with everything from delicious soups (Minestre) to desserts (Dolci), a whole chapter on a fabulous selection of risotti (Risotto, that's right! How'd you guess?), and enough marvelous and often unsuspected rice dishes of many kinds to send you off to the store for a Great Big Bag of Rice. Father Orsini is an experienced cookbook author and an experienced chef, and his readers needn't fear that his recipes are difficult or complicated to follow. They taste really special, but the good father has made them as easy to put together as they are delicious to eat. The history of rice is a bonus for the intelligence; the recipes--from Minestrone to Rice Pudding--are the basic gift for your honest hunger. What more could you ask?

Excerpt from Unpolished Rice, the Staple Food of the Orient: A Lecture to the Vegetarian Society of America, to Which Is Added Over One Hundred Receipts for Cooking Unpolished Rice, Rice Flour, Rice Polish, and Testimonials of Eminent Food Reformers My attention was called to the subject of rice, by observing the great muscular development and strength Of the athletes of Japan, who are said to train chiefly, if not entirely, on a diet of rice. A correspondent in Connecticut inquired if I could procure him a sample of Japanese rice, as he had understood it was richer in protein or flesh-forming element than the South Carolina rice commonly grown in this country. Wheat here is considered so much richer in flesh-forming ele ments that rice in the Middle, Western and Northern States is used only as a dessert, in the form Of puddings, or blanc mange, whereas in the Southern, or rice - producing, states, it is served daily as a vegetable, largely taking the place Of white potatoes in the daily meals. Every Grain Of Rice written by Ellen Blonder and has been published by Clarkson Potter Publishers this book supported file pdf, txt, epub, kindle and other format this book has been release on 1998 with Chinese American families categories.

Fried Green Tomatoes with Flank Steak. Pan-Fried Prawns in Ketchup Sauce. “Stand Back” Chicken. Turkey Jook. Sticky Rice with Sausage and Taro Root. These are the foods that say “family” and “home” to Ellen Blonder and Annabel Low. In Every Grain of Rice they have collected more than 120 outstanding recipes for the delicious homestyle and special occasion dishes they remember so vividly from their childhoods but have rarely found in conventional Chinese cookbooks. Studded with recollections from their years as part of an extended Chinese-American family and with Ellen Blonder’s exquisite watercolor drawings, it is a remarkable debut from two major new talents on the culinary scene. An aunt and niece who are separated in age by only 16 days, Annabel and Ellen were raised virtually as sisters, dividing their time between Ellen’s family farm and the renowned cafe where Annabel’s father was chef/proprietor. From him, and from their mothers, aunts, and uncles, Ellen and Annabel learned to make such satisfying everyday fare as Steamed Minced Pork, Wonton Soup, and Uncle Bill’s Chow Mein, as well as more elaborate dishes as Sweet-and-Sour Whole Fish and festive bamboo-leaf-wrapped Jeng. Special occasions and family gatherings were marked by steaming trays of dim sum and pork-filled Bao, Low Hop Joe’s glistening Soy Sauce Chicken, and the magnificent Boned Stuffed Duck. In chapters ranging from “Comfort in a Bowl” on soups and jooks to “Fish and Seafood” and “Bearing Gifts,” which features foods for holidays and family celebrations, the authors cover the range of traditional Chinese cooking as it was prepared in their childhood homes. The more than 120 recipes and variations offer careful explanations of unfamiliar techniques along with suggestions for replacing hard-to-find ingredients and lowering the fat count of many dishes, and each recipe and story is illustrated with Ellen’s delightful watercolor paintings. With a comprehensive glossary of ingredients and detailed listing of equipment and techniques, Every Grain of Rice is a perfect introduction to the art of Chinese cooking and a moving celebration of food and family.
