Originally published in 1999. The theme running through this collection of essays is that food quality and human health, the welfare of animals and the methods of farming, and the quality of the environment, go hand-in-hand. This theme continues along the lines that the present system is harmful to them all and to our ability to generate enough good food for the whole world. The contributors to the volume offer alternatives - for more humane and moderate methods of farming which produce enough nourishing food without damaging the environment it depends on.

"In The Meat Racket, investigative reporter Christopher Leonard delivers the first-ever account of how a handful of companies have seized the nation's meat supply. He shows how they built a system that puts farmers on the edge of bankruptcy, charges high prices to consumers, and returns the industry to the shape it had in the 1900s before the meat monopolists were broken up. At the dawn of the 21st century, the greatest capitalist country in the world has an oligarchy controlling much of the food we eat and a high-tech sharecropping system to make that possible. These companies are even able to raise meat prices for consumers while pushing down the price they pay to farmers. We know that it takes big companies to bring meat to the American table. What The Meat Racket shows is that this industrial system is rigged against all of us."--Publisher information.

Taste Trade And Technology written by Richard Perren and has been published by Routledge this book supported file pdf, txt, epub, kindle and other format this book has been release on 2017-09-29 with History categories.

Focusing on the interactions of producers, sellers and consumers of meat across the world, Richard Perren elucidates aspects of the evolution of the international economy and the part played by the investment of capital and the enterprise of individuals. The study utilises the government reports and papers issued by all countries involved in the meat trade, including North and South America, Australia, New Zealand and Britain. Beginning in the nineteenth century allows a comprehensive analysis of how an efficient meat exporting industry was built. The industry required investment, which was part of the general process of economic development. Perren focuses on the nature of the firms involved with the trade, the part played in the industry's development by foreign investment and the encouragement given by governments. Close attention is also paid to the stimulus of war, the impact of animal health and food hygiene regulations on producers and the competing demands of interest groups involved in the food businesses. By taking an historical as well as a contemporary approach, the book contributes to the current discussion on the effectiveness of animal and meat inspection in identifying farm livestock diseases such as tuberculosis and BSE. This study advances our knowledge of the process of food distribution in the industrialising and post-industrial economies, and leads to a comprehensive understanding of an important component of the international food chain.

This book is about a life in the meat business. It contains a little about a lot. It has some personal history, an early personal tragedy, it’s a little emotional, contains a lot of frustrations and a lot of honesty. There are a few interesting stories, a lot of valuable lessons and some guidance on how to create worksheets to collect and sort data. It contains an interesting conflict between a subordinate and a superior that doesn’t end well for one of them. The purpose of this book is to give some insight into a business that most people really don’t know anything about. Until the 1980’s primarily a blue-collar business run by some smart men grinding out profits by the pennies. A business that wasn’t and still isn’t for everyone. Only a select group of people who can get up every day knowing there is no finish line and can withstand an ever-changing environment, vicious competition that doesn’t always play by the rules, ever changing markets that can change in the blink of an eye and the pressure to continually “meat” the bottom line until you say, I had enough. After reading this book my hope is that you walk away from it with an understanding of the behind the scenes work that goes into getting that steak you see under the glass at your local butcher shop or supermarket and all those delicious deli meats and salads at your favorite deli. That you can takeaway an idea, learn something from one of the lessons that you can use to help with your everyday routine or use to help you work better with your teams and customers. If nothing else, you enjoyed reading it and it helped you relax and get a few smiles trying to visualize me trying to stick the devils head out the porthole plane window. Over a 55 plus year career I can break it down by using Jack Welch’s 20-70-10 rule. 20% learning, 70% doing and 10% BS.
