Excerpt from Studies of Reconstructed Milk Pure milk contains a variety Of substances, which, for convenience in analysis and reference, are conventionally divided into three groups: Fats, solids not fat, and water. The proportions of these three groups in the mixture vary with the breed Of cattle, the feed, the season, and other variable conditions, but it will be sufficiently accurate for the present purposes and for illustration to say that normal milk contains 35 per cent fats, 9 per cent solids not fat, and 87 per cent water. At a time when, in the interests Of food conservation, the possibili ties Oi desiccated foodstuffs are being developed and their economic advantages exploited, it is unnecessary to dwell at length upon the purely economic benefits which would accrue were it possible to deal with the milk supply Of the country and, especially, with its problems Of storage and transportation, upon a water-free basis. Excerpt from Pure Milk and the Public Health: A Manual of Milk and Dairy Inspection The relation of milk to the public health and the means employed to ensure a safe milk supply is a subject of varied aspects. The proper control of the public milk supply requires more or less of the services of the bacteriologist, the chemist, the physician, the veterinarian, and the progressive dairyman. The ordinary fund of technical knowledge possessed by any one of these classes is not sufficient for coping with the difficulties encountered in carrying on efficient and comprehensive meas ures for milk and' dairy inspection. Furthermore, knowledge concerning the subject is being rapidly increased by contribu tions widely scattered in technical journals. Excerpt from Milk: The Indispensable Food for Children In view of the established importance of milk and the recent gains in scientific knowledge concerning it, a revision of the Children's Bureau bulletin on milk published in 19182 was felt to be needed. The present bulletin is a revision of the material in that publica tion in the light of later research by many authorities. As a result of studies of the food requirements of infants, of older children, and of expectant and nursing mothers the value of milk is now much better understood. For example considerable advance has been made in the study of vitamins in the last seven years. In the present bulletin the vitamins of milk have been stressed; and a table has been compiled from several sources, both in the United States and in Great Britain, showing the vitamin content of different forms of milk. The relative merits of the various forms of canned milk and of the processes used are discussed with special attention to the retention of vitamins and minerals. Improvements in methods of canning are noted. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Ending The War On Artisan Cheese written by Catherine Donnelly and has been published by Chelsea Green Publishing this book supported file pdf, txt, epub, kindle and other format this book has been release on 2019-11-14 with Political Science categories.

A prominent food scientist defends the use of raw milk in traditional artisan cheesemaking. Raw milk cheese--cheese made from unpasteurized milk--is an expansive category that includes some of Europe's most beloved traditional styles: Parmigiano Reggiano, Gruyère, and Comté, to name a few. In the United States, raw milk cheese forms the backbone of the resurgent artisan cheese industry, as consumers demand local, traditionally produced, and high-quality foods. Internationally award-winning artisan cheeses like Bayley Hazen Blue (Jasper Hill, VT) would have been unimaginable just forty years ago when American cheese meant Kraft Singles. Unfortunately the artisan cheese industry faces an existential regulatory threat. Over the past thirty years the US Food and Drug Administration (FDA) has edged toward an outright ban on raw milk cheeses. Their assault on traditional cheesemaking goes beyond a debate about raw milk safety; the FDA has also attempted to ban the use of wooden boards, the use of ash in cheese ripening, and has set stringent microbiological criteria that many artisan cheeses cannot meet. The David versus Goliath existence of small producers fighting crushing regulations is true in parts of Europe as well, where beloved creameries are going belly-up or being bought out because they can't comply with EU health ordinances. Centuries-old cheese styles like Fourme d'Ambert and Cantal are nearing extinction, leading Prince Charles to decry the "bacteriological correctness" of European regulators. The dirty secret is that Listeria and other bacterial outbreaks occur in pasteurized cheeses more often than in raw milk cheeses, and traditional processes like ash-ripening have been proven safe. In Ending the War on Artisan Cheese, Dr. Catherine Donnelly forcefully defends traditional cheesemaking, while exposing government actions in the United States and abroad designed to take away food choice under the false guise of food safety. This book is fundamentally about where and how our food is produced, the values we place on methods of food production, and how the roles of tradition, heritage, and quality often conflict with advertising, politics, and profits in influencing our food choices.

Food has always been central to his story, from Friday-night Korean barbecue with his family to hybridized Korean-ish meals for one—like Gochujang-Buttered Radish Toast and Caramelized-Kimchi Baked Potatoes—that he makes in his tiny New York City apartment. In his debut cookbook, Eric shares these recipes alongside insightful, touching stories and stunning images shot by photographer Jenny Huang. Playful, poignant, and vulnerable, Korean American also includes essays on subjects ranging from the life-changing act of leaving home and returning as an adult, to what Thanksgiving means to a first-generation family, complete with a full holiday menu—all the while teaching readers about the Korean pantry, the history of Korean cooking in America, and the importance of white rice in Korean cuisine. Baked goods like Milk Bread with Maple Syrup and Gochujang Chocolate Lava Cakes close out the narrative on a sweet note. In this book of recipes and thoughtful insights, especially about his mother, Jean, Eric divulges not only what it means to be Korean American but how, through food and cooking, he found acceptance, strength, and the confidence to own his story.
