A Taste of India is a magnificent book, spiced with anecdotes and personal reminiscences, which conveys all the colour and diversity of India's rich culinary heritage. Indian cuisine covers a wide variety of regional cuisines native to India. Because of the diverse types of soil found in the different regions, the different climates in this vast country, and the various occupations of it's inhabitants, Indian cuisines vary significantly from each other. Many of the dishes use locally available spices, herbs, vegetables and fruits. Indian food is also heavily influenced by their various religious and cultural choices and traditions. The development of these cuisines have been shaped by their beliefs, and in particular by vegetarianism, which is a growing dietary trend amongst the Indian society. There's also been a Central Asian influence on North Indian cuisine from the years of Mughal rule. Indian cuisine has been evolving all the time. Even today, it's still evolving, as a result of the nation's cultural interactions with other societies. Historical events such as foreign invasions, trade relations and colonialism have also played a major role in introducing certain foods to India. As an example, the potato, a staple of the Indian diet, was originally introduced to India by the Portuguese, who also introduced chillies and breadfruit. Indian cuisine has also shaped the history of international relations. The spice trade between India and Europe is often cited by historians as the primary catalyst for Europe's Age of Discovery. Spices were purchased from India and traded around Europe and Asia. Indian cuisine has also influenced other cuisines across the world, especially those from South-east Asia, the British Isles, and the Caribbean.
