El estudioso del tema encontrará teorías básicas para desarrollar el gusto por el vino, con reseñas de catas comparadas en las cuales el autor ha tenido el honor y el gusto de participar, para identificarlos, con sus cualidades o defectos. Teorías basadas en el juicioso estudio de los libros del profesor Emile Peynaud y de Jancis Robinson y también el trabajo de Ferrán Centelles. Todo esto va dirigido a los gerentes de Alimentos y Bebidas, los administradores de los Restaurantes y a los sommeliers; por supuesto, a los estudiantes de la Facultad y a los apreciados amigos del vino.
