Durante los últimos años la industria alimentaria ha experimentado un desarrollo sin precedentes y se ha convertido en una de las principales fuerzas económicas de todos los países desarrollados. Algunas de las técnicas de mayor capacidad y potencialidad de diagnóstico, en muchos casos no destructivas y aplicables en línea, son las que se recogen en el presente libro: espectroscopía de infrarrojo próximo, ultrasonidos, análisis de imagen, calorimetría diferencial de barrido, y nariz electrónica.
