Excerpt from Methods of Sun-Drying Fruits Fruit-drying is of peculiar importance in California. On the fresh basis the tonnage of fruit dried is four or five times as great as that canned. The principal drying fruits of the world are grown in this state. The concentration of fruits by drying reduces the cost of transportation to the distant markets that are the principal outlets for California fruits. In no state of the Union except California, where the climate is especially favorable, is the sun-drying3 of fruits practiced on an exten sive scale. California produces well over 90 per cent of the dried-fruit output of the United States, only prunes and apples being dried in amounts of commercial significance in other states, where the use of artificial heat is essential for satisfactory drying. Apples are never sun dried commercially, even in California. Of the total tonnage of dried fruits produced in the world, dates are the largest item, amounting to from to Of this amount, however, only about 10 per cent enters international commerce, and the United States produces only a negligible tonnage. The United States production of dried figs is also relatively small. In the produc tion of other dried fruits the output of California bulks large. Accord ing to the California Cooperative Crop Reporting Service, the annual output of dried fruits in California for 1930, 1931, and 1932 averaged over tons of prunes, and over of raisins. The production of dried apricots and of peaches averages about tons each; figs, tons; and pears, less than tons. If fresh shipment and canning do not keep pace with the increasing production, it may become necessary to dry a greater proportion of the fruit crop than formerly. The production of dried fruits is also expanding in other parts of the world, notably Australia and South Africa. At present, the rate of financial exchange and other condi tions resulting from the world war seriously restrict exports of dried fruits from the United States and moreover permit the importation of certain dried fruits from the Mediterranean countries. Excerpt from Drying Vegetables and Fruits for Home Use Home Drying, with the exception of some drying of fruit, had almost become a lost art in American homes previous to the war. The war's demands for increased saving of food and difficulty in obtaining sufficient containers in which to can the large surplus production brought home drying into prominence again. On account of the demands from the county home demonstration agents, the Office of Extension Work South, in April, 1917, furnished instructions in improved methods in home drying of fruits and vegetables, with the result that in 1917 there were dried and stored for home use in the 15 Southern States 5,511,881 pounds of fruit and vegetables. The improved methods brought home drying into such favor in the South that in 1918 the amount of dried fruit and vegetables stored for home use in the Southern States amounted to almost 6,500,000 pounds. The methods which have been successfully used in this work by home-demonstration agents in the South are described in this circular.
