Excerpt from The Story of Dried Fruits The knowledge of sun-preserved fruits is very old - so old none may know its beginning. It is recorded in history that King David of Israel accepted raisins as payment of taxes. In 430 B. C. a Babylonian mortgage, the earliest known document of its kind, called for the return of principal and interest in dried fruits. Peaches are mentioned in the writings of Confucius Through the ages the word comes down that these fruits, which through the agency of a benificent sun were made available through all the year, from harvest time to harvest time, were always considered a delicacy. As populations shifted and spread from out of the sunny plains of the Adriatic countries, where most of these fruits had their beginnings, so far as it is recorded in history, the vines and trees from which they came were transplanted. Those to whom they were new eagerly accepted them and spread their popularity. The ancients ate of these fruits because they were good to eat and pleased their palates, and to a great extent we do likewise, although with our larger knowledge and understanding of dietetic values we are pleased to know that they offer a most pleasant method of obtaining easily assimilated energy. Always the center of the dried fruit industry has shifted westward until on the shores of the Pacific it has reached its highest development in the southern part of California. If fresh shipment and canning do not keep pace with the increasing production, it may become necessary to dry a greater proportion of the fruit crop than formerly. The production of dried fruits is also expanding in other parts of the world, notably Australia and South Africa. At present, the rate of financial exchange and other condi tions resulting from the world war seriously restrict exports of dried fruits from the United States and moreover permit the importation of certain dried fruits from the Mediterranean countries. Excerpt from Methods of Sun-Drying Fruits Fruit-drying is of peculiar importance in California. On the fresh basis the tonnage of fruit dried is four or five times as great as that canned. The principal drying fruits of the world are grown in this state. The concentration of fruits by drying reduces the cost of transportation to the distant markets that are the principal outlets for California fruits. In no state of the Union except California, where the climate is especially favorable, is the sun-drying3 of fruits practiced on an exten sive scale. California produces well over 90 per cent of the dried-fruit output of the United States, only prunes and apples being dried in amounts of commercial significance in other states, where the use of artificial heat is essential for satisfactory drying. Apples are never sun dried commercially, even in California. Of the total tonnage of dried fruits produced in the world, dates are the largest item, amounting to from to Of this amount, however, only about 10 per cent enters international commerce, and the United States produces only a negligible tonnage. The United States production of dried figs is also relatively small. In the produc tion of other dried fruits the output of California bulks large. Accord ing to the California Cooperative Crop Reporting Service, the annual output of dried fruits in California for 1930, 1931, and 1932 averaged over tons of prunes, and over of raisins. The production of dried apricots and of peaches averages about tons each; figs, tons; and pears, less than tons. Excerpt from Quality of Dried Fruits: A Survey of Dried Apricots, Prunes, Raisins, and Figs in Retail Markets Standard samples were obtained directly from the packers at intervals during the year and were stored at Fresno in tightly closed drums at 32° F. Medium and large sizes of apricots and prunes, which account for most of the sales volume, were used. Two widely distributed brands of each commodity were included. The first set of standard samples was obtained in October 1959 and was used for comparison with the retail sam ples at each examination throughout the sampling period. A second set of standards of apricots, prunes, and raisins was obtained in March 1960 and a third set in July 1960, and these were used in addition to the first set. The standard samples for figs were in finger packs, and only one set of standards was used. Standard samples did not change appreciably after they were stored at Fresno, but the raisin standards obtained in March and July were darker than the first set.
