La cocina peruana no es un libro de cocina al uso. No hay en él recetas para que sean seguidas por el lector o practicas por algún cocinero, aunque se sugieren algunas de honda y severa tradición. No pretende descubrir nada tampoco _aunque hay en él muchas y variadas novedades_ en un mundo tan prolijo como es el de la gastronomía del Perú, un país tan rico en el mundo de la mesa que podríamos decir que tiene tantas variedades de comidas como de microclimas, que ya es decir. No. ¿Qué es entonces La cocina peruana? Es un libro de filosofía de la cocina: un libro que pretende descubrir las excelsitudes del buen comer y del buen beber sin caer por ello en un elitismo excluyente. Es un libro que pretende hacer suyo un eslogan bien sencillo, la paráfrasis de un pensamiento compartido ya por nuestros abuelos: dime como te alimentas y te diré quién eres, sin humillar por ello a aquellos desheredados de la fortuna que la maldad de los hombres han llevado al muchuy, a la privación más injunta, la que enfrenta al cóndor al zorro en la conocida fábula. La manera de afrontar este lbro es novedosa, sin inventar nada. Se trata de ahondar en el léxico de los ancestros quechuas, de descubrir y traer a "colación" que hay debajo de tantas palabras relativas a la cocina desde fechas inmemoriales; del porqué del wayk'uy y del yanuy, como elementos vertebradores de dos modos diferentes, y a la vez complementarios, de afrontar la alimentación de cada día. El quechua es lengua rica en estos términos culinarios y sólo el concepto "cocinar" de español puede requerir además de las citadas, referencias como chayay, hank'ay, harwiy, kankay, kusay, panquy, punpiy, q'aspay, t'inpuy o thiqtiy. Esa riqueza léxica, que se descubre y recopila a lo largo de todo el libro, que se analizar con primor y textualiza, se debe a la riqueza profunda de unas técnicas de restauración ancestrales, de una variedad de modos de afrontarlas, de una pluralidad grande de materias primas y de un arte, sobre todo de un arte que se ha visto enriquecido con el mestizaje de la cocina española, y, posteriormente, con las aportaciones más modernas de la cocina del Pacífico. Que les sirva a todos ustedes de provecho este libro de quien es, meramente, un aprendiz de causas y de cebiches, de chupes y chiri uchus, de pachamancas y cafchis.
