Le présent ouvrage qui fait écho à celui de l'illustre prédécesseur Kuhnholtz-Lordat " La genèse des appellations d'origine des vins " publié en 1963, s'adresse aussi bien à des chercheurs, enseignants, étudiants, qu'à des vignerons et amateurs éclairés. Ce livre fait le point des connaissances actuelles sur le sujet, les différentes méthodes d'approche, et traite des effets démontrés de divers facteurs naturels sur la vigne et le vin. Il présente une méthode opérationnelle d'étude des terroirs viticoles, pouvant être utilisée à l'échelle régionale et dotée d'un volet de cartographie des Unités de terroir d'un vignoble. Mise au point grâce au programme " Terroirs d'Anjou ", elle comporte une caractérisation des facteurs naturels du terroir utilisant un modèle de terrain apte à identifier des unités de terroir homogènes et pertinentes. Elle comprend aussi une enquête agroviticole, réalisée à l'échelle de la parcelle, pour étudier l'effet terroir sur la vigne et le vin et la perception empirique qu'en ont les vignerons (facteurs humains du terroir). Les résultats concernant la validation de cette nouvelle méthode sont présentés et discutés. Enfin, la dernière partie de l'ouvrage donne un exemple de valorisation concrète d'une telle étude, appliquée au vignoble de l'Anjou. Il s'agit d'atlas cartographiques, utilisables à la parcelle.
