Meat and dairy production and consumption are in crisis. Globally 60 billion farm animals are used for food production every year. It is well accepted that methane emissions from cattle and other livestock are major contributors to greenhouse gas levels and to climate change. The Food and Agriculture Organization of the United Nations (FAO) predicts a rough doubling of meat and milk consumption by 2050, with particularly rapid growth occurring in the developing economies of Asia. This could raise the number of farm animals used annually to nearer 120 billion. What will this mean for the health and wellbeing of those animals, of the people who consume ever larger quantities of animal products, and for the health of the planet itself? This powerful and challenging book explores these issues surrounding the global growth in the production and consumption of meat and dairy animals and products, including cultural and health factors, and the implications of the likely intensification of farming for both small-scale producers and for the animals. Several chapters explore the related environmental issues, from resource use of water, cereals and soya, to the impact of livestock production on global warming and issues concerning biodiversity, land use and the impacts of different farming systems on the environment. A final group of chapters addresses ethical and policy implications for the future of food and livestock production and consumption. Since the first edition, published in 2010, all chapters have been updated, three original chapters re-written and six new chapters added, with additional coverage of dietary effects of milk and meat, antibiotics in animal production, and the economic, political and ethical dimensions of meat consumption. The farming of animals for meat and milk confronts a stark dilemma. While world demand from a growing and more affluent human population is increasing rapidly, there are strong counter-arguments that we should eat less meat and pay more attention to environmental protection, animal welfare and human health and well-being. The aim of this book is to identify and explain the causes and contributors to current problems in animal husbandry, especially those related to 'factory farming', and advance arguments that may contribute to its successful re-orientation. Husbandry is considered in its broadest sense, namely the productive and sustainable use of the land for the good of all (plants, humans and other animals). The first part of the book outlines principles and arguments necessary to engage with current problems: depletion of natural resources and destruction of environment, animal welfare, food and health, fair trade and sharing resources. These arguments are illustrated by examples and sufficient evidence to justify the argument without obscuring the message. The second part presents a series of constructive proposals for change and development in animal husbandry, both in the developed world and subsistence agriculture. These include more integrated crop and livestock farming systems, the ethics of animal welfare and environmental management, and the evolution of a new social contract whereby the rights of the people to a fair share of good, safe food and a green and pleasant land are matched by a shared responsibility to preserve these things.

Besides one will have a closer look at its development and possible reasons for people to continue eating meat nowadays. The meat inspection law means 'meat' when talking about fresh or prepared parts of warm-blooded animals, which can be used for human consumption. Despite this containment one has to note that marine animals and other not warm-blooded animals are used for the consumption of meat as well. Still, for the following paper Hellichs and Schroeters definition of meat is enough, because it deals mostly with cattle and horses. On this occasion we deal mostly with meat products, which are produced and used in Germany. Since the last bovine spongiform encephalopathy crisis, short BSE-crisis, the industry must deal with a scandalous image on meat. Besides, bird flu, foot-and-mouth disease and different scandals with packaging lead to uncertainty within the German consumers. Their trust has been misused and people started to call for environmental friendly and animal friendly meat production. Today the meat consumption minimally decreases with every year, but the global consumption is still increasing. This causes consequences such as the increase of meat production which causes heavy environmental damages, which are responsible for devastating global impacts. The question, why people still consume that much meat despite they know what impact it has on the environment, arises.
