Written by a team of international authorities, Feed Evaluation Science, is a must-have for students, researchers, postdoctoral fellows and teachers of animal nutrition, as well as practitioners in the feed industry. The text offers a classical treatment of the basic principles and new developments in feed evaluation for simple-stomached animals with emphasis on pigs and poultry. The chapters follow a logical progression, to provide a coherent in-depth coverage of the key science and technology inherent in the nutrition and feeding of animals. The topics covered are nutrient analysis and characterisation, nutrient-bioavailability, post-absorptive nutrient utilisation, the principles of animal growth and the mathematical modelling of growth. Practical aspects of feed processing, anti-nutritional factors, the use of markers in nutrition studies, predicting bioavailable nutrients and the principles of feed formulation are highlighted in the context of pig, poultry and companion animal nutrition. This is a classic text on the nutrition of simple-stomached animals, and is intended for those working at the forefront of developments in feed evaluation science."

This classic reference for poultry nutrition has been updated for the first time since 1984. The chapter on general considerations concerning individual nutrients and water has been greatly expanded and includes, for the first time, equations for predicting the energy value of individual feed ingredients from their proximate composition. This volume includes the latest information on the nutrient requirements of meat- and egg-type chickens, incorporating data on brown-egg strains, turkeys, geese, ducks, pheasants, Japanese quail, and Bobwhite quail. This publication also contains new appendix tables that document in detail the scientific information used to derive the nutrient requirements appearing in the summary tables for each species of bird.

A variety of processing methods are used to make foods edible; to pennit storage; to alter texture and flavor; to sterilize and pasteurize food; and to destroy microorganisms and other toxins. These methods include baking, broiling, cooking, freezing, frying, and roasting. Many such efforts have both beneficial and harmful effects. It is a paradox of nature that the processing of foods can improve nutrition, quality, safety, and taste, and yet occasionally lead to the formation of anti-nutritional and toxic compounds. These multifaceted consequences of food processing arise from molecular interactions among nutrients with each other and with other food ingredients. Since beneficial and adverse effects of food processing are of increasing importance to food science, nutrition, and human health, and since many of the compounds formed have been shown to be potent carcinogens and growth inhibitors in animals, I organized a symposium broadly concerned with the nutritional and toxicological consequences of food processing. The symposium was sponsored by the American Institute of Nutrition (AIN) -Federation of American Societies for Experimental Biology (FASEB) for its annual meeting in Washington, D.C., April 1-5, 1990. Invited speakers were asked to develop at least one of the following topics: 1. Nutrient-nonnutrient interactions between amino acids, proteins, carbohydrates, lipids, minerals, vitamins, tannins, fiber, natural toxicants, etc. 2. Effects of radiation. 3. Thermally induced formation of dietary mutagens, antimutagens, carcinogens, anticarcinogens, antioxidants, and growth inhibitors. 4. Effects of pH on nutritional value and safety.

When it comes to life science and specially by considering animal-origin protein, one of the main topics to gain importance with respect to human nutrition and health is poultry science. This book presents an introductory overview to the different fields/branches of poultry science with four main divisions: different feed resources for poultry, biofilms of salmonella and campylobacter in the poultry industry, prevention of different contaminants in modern poultry farms, and mycotoxins in poultry feed. This book will be beneficial for the graduate students, teachers, researchers, farmers, and other professionals, who are interested to fortify and expand their knowledge about chicken products in fields of poultry science, biotechnology, plant science, and agriculture.

This reference provides in-depth coverage of the history and current status of the fuel ethanol industry in the United States. It examines processing methods, scientific principles, and innovations for making grain-based fuel ethanol; physical and chemical properties of distillers dried grains with solubles (DDGS); assay methodologies for compositional analyses; and mycotoxin occurrence in DDGS. The contributors also discuss changes during processing and analysis of factors causing variations in compositional, nutritional, and physical values. Additional chapters cover emerging uses for DDGS, including feed for livestock, feedstocks for bioenergy production, ingredients for food, and industrial materials.
